The industrial basket fryer mod. Italia 130 was designed following the rules introduced by Toyotism in the 1960s. We started from an empty file and re-studied everything in order to minimize waste....
We have designed an innovative system that allows the oil to heat up faster. The cooking tank has been engineered by simulating the convective motions of the oil to ensure perfect cooking, and has been optimized to minimize the amount of oil needed to cook food.
These innovations save the end customer about 25 percent cooking oil and 30 percent gas in the preheating phase.
Customers' demands
Basket fryers were engineered by considering:
- Oil heating times;
- The maintenance of oil temperature during cooking;
- The optimization of tank geometry to promote convective motions of the fluid;
- Volume optimization to use little frying oil.

The fryer is characterized by a study on the standardization of its components.
This research activity led us to design baskets with standard dimensions, which can also be purchased at a later date, to increase the mix of products fried simultaneously.
The space in the tank has been optimized to the maximum, precisely to allow the customer to fry different products simultaneously.
Convective fluid motions are guaranteed with both the standard basket and the modular baskets.

Our designers, however, did not stop at just the technical, the design of our fryers was studied by experts in industrial design in order to guarantee our customers, in addition to performance and practicality, the beauty of modern lines.

The modular design allowed us to develop an accessory, which can also be purchased later, that allows the customer to empty the frying oil tank, filter the oil through the special food filter, and refill the cooking tank with the filtered oil. The whole operation is done automatically; the operator only has to worry about manually performing the initial setup.
